Light and refreshing Ceviche made with fresh fish, seafood, and produce. Perfect for an end-of-the-week Friday night easy abortion pill meal! Great for entertaining!

Ingredients

1/2 lb fresh tilapia
1/4 lb fresh shrimp, peeled and deveined
1/4 lb fresh bay scallops
1/4 lb squid
1 c fresh lime juice
2 T fresh orange juice
2/3 c chopped Roma tomatoes, seeded
1/2 c chopped cucumber, peeled and seeded
1/3 c finely chopped sweet onion
1 small Cubanelle pepper, finely chopped
2/3 c Zing Zang ® Bloody Mary Mix
1/4 c clam juice
1 T Tabasco ®
1/4 t Worcestershire sauce
1 t sea salt (Himalayan if you have it)
1/3 c fresh cilantro, chopped

Procedure

    Squeeze limes and the orange until you have the right amount of acid. You'll need about 9 limes and 1/2 orange. Set aside. Cut fish into bite sized pieces and place in a large work bowl. Refrigerate while cutting the remaining seafood -- placing each in the same bowl in the refrigerator while you work. Add the citrus to the seafood medley and toss thoroughly. Cover with plastic wrap and chill about 25 minutes. Prepare the mise en place while the seafood cures. (Cut and prepare produce.) Set aside. Remove the seafood from the citrus juices and gently squeeze the excess liquid out of the proteins without breaking them up. Discard the citrus. In a clean bowl, combine the seafood with the remaining ingredients, except the avocado and corn relish. Gently mix together. Cover and chill until ready to serve. This is great on fresh corn tortillas, or just alone with avocado and extra cilantro to garnish. We like a little corn relish on top and some extra lime juice! Serve with a margarita made with fresh lime juice and you'll feel like you're in the tropics...
